Cheese-Making Terminology from Meadow to Milk: Terminological Heritage of Comté Production in Light of Ecoterminology

Abstract

This paper presents an innovative methodological approach to documenting the terminology used in the production of Comté type cheese in France, using non-standardized data whose scope is defined in the ethno-discursive approach to the industry. This approach forms the basis of ecoterminology that is particularly pertinent to all sensory fields, starting with agri-food. A first exploratory study using this approach is proposed, based on a corpus targeting the earlier phase of Comté production, i.e. the milk production phase. The analyses show how the terminologies used by farmers are certainly technical, but also and primarily informed by much more general models of discourse demonstrating their social awareness.
